Secale 2013 Version Française Cerealis
Made from a blend of 51% rye and 49% malted barley and fermented for over 10 days, this expression from the Cerealis collection is in the vein of the great pre-Prohibition American whiskies. But here, instead of traditional American oak barrels, new Jura oak casks have been used for ageing. The aromatic palette of this whisky is punctuated by spicy and herbaceous sequences of remarkable freshness.
Tasting Notes
Nose: Lively and spicy. The first nose evokes citrus fruits, then evolves
towards spicy, smoky aromas and crunchy biscuit notes. Finally, a fine, elegant woodiness emerges.
Palate: Straightforward and airy. The attack on the palate combineslightness and freshness with herbaceous flavours. Then, spices come through on the mid-palate, soon softened by notes of melon.
Finish: Warm and steamy. The start of the finish is roasted and chocolatey. A fruity sweetness is followed by light herbal notes.
